Turkey Stuffed Peppers

I am loving experimenting with new healthy recipes. Tonight it was turkey stuffed peppers. They were delicious. 



How to count it for the 21 Day Fix: 
2 greens,1 red, 1/2 yellow, 1/2 blue 

Instructions:
4 green peppers
1 cup brown rice
1/2 medium yellow onion diced 
1 can diced tomatoes
1 clove garlic diced 
3 tbs grated cheese 
1 lb turkey ground
1 tsp olive oil 
Spices 1/2 tbs each: cumin, onion powder, garlic powder, pepper and paprika. 

Sauté the onion and garlic in olive oil until translucent and set aside. Brown the ground turkey. Cook the rice and set aside. Cut the tops off the pepper and boil them to soften for 4 minutes. Drain the tomatoes. 

Combine the turkey, rice, tomatoes, onions, garlic and spices.  Place the mixture to peppers and sprinkle with cheese. Bake at 325 for 20 minutes. 

Enjoy! 

Side note: My husband preferred adding salsa and sour cream. Oh and extra cheese!
